We’ve teamed up with a local farm and bought our own mill!
Hall Farm is a pioneering farm that gives equal priority to food production and nature conservation and is a local champion for the regenerative farming movement.
Regenerative farming aims to grow food whilst improving soil, habitat and ecological health with minimal or zero chemical inputs and shares similar values with organic growing methods.
Our mill and flour
Our stone mill was built in Austria, is made from pine wood and can produce either wholemeal or white (ish) flour, semolina and bran. We are only milling wheat grown at Hall Farm. Stone-milling differs to modern milling processes in that white flour is made by sieving the bran out of wholemeal flour. This means that the white flour still contains small particles of bran and wheat germ, giving the flour a slightly darker colour than conventional white flour. We’ve just launched our own plain white flour for cakes, cookies and pastries.
Our baked products
Look out for our Knettishall Wild wholemeal sourdough - many of our sweet products are made from our own flour and we’re developing further recipes as we go.
